Umm Ali is a famous recipe enjoyed during Ramadan by the Arab world in general and the Gulf in particular. Typically this recipe includes puff pastry and heavy cream and is full of calories and fat. Below is a nice way to keep enjoying the delicious taste of Umm Ali with about half the damage!
Umm Ali (serves 8 persons)
, Ingredients Procedure ,Crepes, 8 pc (see recipe below) 3Tbsp of raisins
3Tbsp coconut shavings
3Tbsp almonds
3Tbsp pistachios
2Tbsp rose water
500mls of low fat milk
3Tbsp corn starch
150g sugar
,- Cut the crepes into small pieces and put them in the oven until crisp
- In a bowl combine all the nuts and the rose water, then add the crispy crepes over them
- Place the nuts & crisps in an oven pan
- Mix the milk with the corn starch at room temperature
- Add the sugar to the milk and bring to a boil in a sauce pan. Turn off the heat as soon as the mixture start to boil and the texture thickens
- Add the milk mixture over the nuts in the pan and place them in the oven for about 5-7 minutes until the top is golden brown
- Sprinkle some nuts at top for decoration
Crepe Dough 1/2 cup of whole wheat flour1/2 cup of all-purpose flour2 eggs
½ cup low fat milk
½ cup water
½ tsp salt
Spray oil for the pan
,- In a large bowl whisk together the flour and the eggs
- Gradually add the milk & the water
- Add the salt and beat the mixture well until smooth
- Heat a pan then scoop the batter onto it, using approximately 1/4 cup for each crepe
- Tilt the pan with a circular motion so that the batter coats the surface evenly
- Cook each crepe for a couple of minutes turning it over with a spatula once golden in color
Note: 1cup is 240mls; 1Tbsp is 1 tabelspoon (15mls)
