Sea bream – or dorade – the most popular Mediterranean fish in Europe and Russia. It has tender white flesh and shimmering silver skin. Its flavor is rich, succulent and meaty, similar to that of pompano or red snapper. This recipe includes very few light flavors but when mixed together, the result is extraordinary – give it a try, I hope you enjoy it!

Ingredients

  • 3 whole sea bream, cleaned and gutted (head and tail intact)
  • 4 lemons, sliced into (1 cm thick) wheels
  • 1 tbsp olive oil, plus extra for greasing
  • 9 bay leaves
  • Sea salt and freshly ground black pepper, to taste

Method

1. Heat the oven to 180°

2. Place aluminium foil on a large baking tray and lay half the lemon wheels on top.

3. Slash the fish through the flesh down to the bone – this allows it to cook evenly and quicker than normal. Season and rub with the olive oil. Place the bay leaves inside the cavity.

4. Lay the fish on top of the lemon wheels on the aluminium foil and place the remaining lemon wheels on top of the fish. Season with salt and freshly ground black pepper, to taste. Cover the fish with aluminium foil.

5. Bake in the oven for 30 minutes or until the flesh is cooked through.
