1. Machboos: Kuwait, Bahrain, Saudi Arabia, Yemen
A rice-based dish made with spices, rice and chicken, mutton, fish, eggs, or vegetables, Machboos is very prominent in the Gulf. Sometimes called Kabsa, it is thought to be indigenous to Yemen.
2. Tabbouleh: Lebanon, Syria, Iraq
Made of tomatoes, finely chopped parsley, mint, and onion, and seasoned with olive oil, lemon juice, and salt, this dish is served as part of a mezze.
3. Ful medames: Egypt, Yemen, Saudi Arabia
Served with vegetable oil, cumin, and optionally with chopped parsley, garlic, onion, lemon juice and chili pepper, this dishes name originates from Coptic, meaning buried.
4. Balaleet: Qatar, United Arab Emirates
Noodles cooked with sugar, cinnamon, saffron and cardamom, this dish is mainly served for breakfast. Although it is enjoyed year round, it is traditionally served for Eid.
5. Chelow kabab, Iran
This meal is simple, consisting of steamed rice and kabab meat.
6. Fatteh: Syria, Lebanon, Palestine
Made of flatbread, yogurt, chickpeas, and oil, fatteh comes from the Arabic for buried. We are sensing a theme.
7. Saltah, Yemen
This dish made of brown meat stew, a dollop of fenugreek froth, and sahawiq, in addition to rice, potatoes, scrambled eggs, and vegetables. Originating from Sana'a, the dish is believed to be a thousand years old.
8. Couscous: Morocco, Tunisia, Algeria, Libya
Made of semolina and cooked by steaming, this dish is traditionally served with a meat or vegetable stew spooned over it.
9. Chakhchoukha: Algeria
This dish consists of tearing small pieces of rougag, a thin round flatbread, and mixing them with marqa, a stew.
