Being a vegetarian in Egypt is no easy task because almost every Oriental dish must contain some sort of animal meat. Why? I have no idea.
With the help of the Internet however, vegetarians in Egypt are now able to finally eat something other then French fries.
Here are my favorite, easy to do, light dishes. Enjoy!

3. Spinach Mashed Potato

6. Falafel with Avocado Spread
It's not the traditional Egyptian falafel but it's still perfect for breakfast on the go or just quick lunch in between meetings or classed. The entire dish is done within 20 minutes or less.
7. Veggie Lettuce Wraps
Easy, quick and delicious and the recipe is incredibly simple. Picky eaters tend to like it too. However, make sure to pick Bibb Lettuce because they're loaded with nutrients.
8. Roasted Veggie Mac 'N Cheese
